Olya Kajuchi Usal

Cashews grow abundant in Coastal part of Maharashtra. Cashew Usal or Cashew nuts curry is a delicacy from Konkan region. To make this recipe freshly picked cashews-nuts are used. Cashew nuts are cooked in a simple yet flavorful paste of coconut, coriander, cumin, and green chili. Its a calorie dense curry still worth to try.
Note: If fresh cashew nuts are not available, use dried cashew-nuts. Soak dried cashew nuts in warm water for one or two hours.
